Tonight, I raided my cupboards and the fridge for supplies for dinner. I wasn't sure what i would end up with but after a few google searches with the ingredients I found I came across a recipe for Pumpkin chili. I wasn't sure how I felt about pumpkin in chili, but I was willing to give it a shot - especially since I had a fresh batch of homemade pumpkin puree just calling out to be used in something delicious!!
Here is the recipe. It was actually really good, the pumpkin gave it a really good texture more than anything else. So for any of you who open a big can of pumpkin and you can't use it all at once, you should try this out.
I served it with sour cream, and a little cilantro. Oh, and a big glass of wine.
